15-Minute Stir-Fried Cauliflower Rice (4 Ingredients!)

After a long day, or for a quick at-home lunch, this amazingly satisfying stir fry checks off all of the boxes for me. Many times when meal time comes around, I want to eat healthy, but don't want a huge fuss, but also would just love the ease and deliciousness of takeout. So this is my latest go-to! I use frozen cauliflower rice which absorbs all of the yummy sauce, cooks up in minutes, gives me a serious helping of veggies (cruciferous for that matter! Bonus!), and when paired with frozen wontons (or dumplings or gyoza) make for a full, filling, tasty meal. Another bonus? If your kids like rice and enjoy Chinese takeout, then this is a winner for a family meal loaded with nutrients!

Ingredients

1 tsp toasted sesame oil

16 oz. frozen cauliflower rice

1/4 cup coconut aminos* (I prefer Trader Joe's brand, but you can also find it at Target or online here)

1 tbsp tamari** (or soy sauce)

Dash of ginger, optional


Directions

Heat a large skillet over medium-high heat. Add the toasted sesame oil and cauliflower rice. Stir around and break up any clumps. Add the coconut aminos and tamari (and ginger if using). Stir well to completely incorporate sauce. Continue cooking over medium-high heat until any excess liquid is cooked off and rice is heated through. Taste and adjust with extra aminos, tamari, or a sprinkle of salt, according to your own preferences. Serve alongside your favorite frozen dumplings for a filling, and quick meal!

Note: Play with this recipe, and feel free to add even more color and nutrients with shredded carrots, frozen peas, shredded cabbage, sauteed onion, or crunchy seeds.

*Coconut aminos are sweet and not salty, so it does not work to sub soy sauce in this recipe.

**Tamari is a salty, fermented soy product. If you are avoiding soy you may completely omit this, add an additional 1-2 tbsp coconut aminos and a dash of salt.
