Sweet potatoes and black beans are two pantry staples in our home. And they’re a match made in tastebud heaven (excuse the clichê, bc it’s true!) Plus there’s a lot to be said for the duo aside from how well they pair together. Between the two, you’ll get some vitamin C plus a good amount of potassium, iron, B-vitamins, and meet your daily requirement for vitamin A. A nice amount of folate is also a benefit, especially for pregnant women. Plenty of protein, and lots of fiber lend to this combo being an exceptional choice for type II diabetics and anyone trying to drop weight, as these two keep blood sugar from spiking. On that note, there is something to appreciate in a sweet vegetable such as sweet potatoes or even sweet bell peppers. If you’re trying to avoid added sugar or are struggling with sugar cravings, eating naturally sweet, whole foods can satisfy the sweet tooth without the sugar rush and crash that lead to more cravings, erratic blood glucose, fatigue, weight gain, and sometimes brain fog. Oh, and I’m not one for calorie counting, but to drop one more bonus for those of you who do watch your calorie intake, a 1 1/2 cup serving of a sweet potato black bean dish will yield you a mere 230-250 calories.
