Chickpea Loaded Purple Sweet Potato with Thai Peanut Sauce
Sweet potatoes are so versatile. I love making them into fries, dicing and roasting them for grain and veggie bowls, or simply topping them with some savory favorites to celebrate their contrasting sweetness. In this easy and quick dish, I suggest planning ahead and making the Thai Peanut Sauce days in advance, as it will keep for over a month in the refrigerator. The crispy chickpeas can be made while the potatoes are cooking, or they can also be made in advance and stored for later. Meal prepping, along with using the instant pot for the potatoes makes this truly a no hassle dinner or lunch.
Serves 2 (or more, just adjust for amount of potatoes)
Ingredients
2 medium purple sweet potatoes
Thai Peanut Sauce (recipe follows)
Fresh lime, cut into quarter wedges
Cilantro
Directions
Prepare the Thai Peanut Sauce, and set aside. This can be done days in advance.
Clean the sweet potatoes, poke top and bottom with a fork, and cook preferred method. I cook them in the instant pot by adding one cup of water to the pot, placing potatoes on the rack, setting to high pressure, and cooking for 23 minutes (cook time will vary by size of potato. I suggest check this site for more details.) Once perfectly cooked, slice each potato in half lengthwise. Smother in preferred amount of Thai Peanut Sauce, top with crispy chickpeas, squeeze a quarter lime wedge over all, and top with cilantro.
If prepping for later, such as weekly lunches, place each potato in glass container, slice in half lengthwise, and top with sauce and cilantro. Place lime wedge on the side for use just before eating. Store crispy chickpeas in their own airtight bag to add just before eating.
Thai Peanut Sauce
2 tsp red curry paste
1/4 cup + 1 tbsp natural peanut butter, or any nut or seed butter (we often use almond butter)
1/4 cup coconut aminos
1/4 cup full-fat coconut milk
Juice of 1/2 a lime
1 tsp garlic powder
1/2 tsp freshly grated ginger or 1 tsp ginger powder
1 tsp raw honey or pure maple syrup
Directions
Whisk all ingredients together, adding salt or honey to preferred taste.
