Decadent Nut Butter Cups

These 3 ingredient indulgent cups are fudgy thanks to homemade dairy-free ganache. Customize them with whatever fillings you’d like!

Makes 24 mini cups


Ingredients

1 cup dairy-free dark chocolate

1/2 cup dairy-free milk, such as almond, coconut, or Ripple pea protein milk

Nut or seed butter of choice


Directions

Line a mini muffin tin with paper liners. Add chocolate chips to a bowl. In a small saucepan, heat milk until simmering, stirring occasionally to prevent scalding. Pour hot milk over chocolate chips and gently whisk until fully combined. This is your ganache.

Pour a teaspoon of ganache into each liner, then tap the whole muffin tin on the counter a few times to help the ganache flatten into an even layer. Freeze for a minimum of 15 minutes. Remove from freezer and scoop a teaspoon of nut or seed butter on top of ganache. Return to freezer for 15 minutes. Microwave ganache for 30 seconds to loosen it back up, then top nut or seed butter with another teaspoon of ganache. Again, tap the whole muffin tin on the counter a few times for the ganache to spread. Freeze for 15+ minutes before enjoying.

Store in freezer or fridge.
