Grapefruit Avocado Salad

The citrus pairs beautifully with the creaminess of the avocado in this delightful, nutrient-dense salad.

Serves 2

Ingredients

1 grapefruit, cut into segments, peel and pith removed (need only 10 segments, eat the rest plain!)

1 avocado, sliced into 10 slices

1 tbsp olive oil

1 tbsp fresh lemon juice

1 tsp honey, (maple syrup or agave if vegan)

1/4 tsp Dijon mustard

1/4 tsp granulated garlic

Pinch salt


Directions

Prepare your grapefruit segments and avocado slices. Arrange in alternating layers on a platter. Next, whisk together olive oil, lemon juice, honey, mustard, garlic, and salt. Drizzle half of vinaigrette (or desired amount) over grapefruit and avocado. Enjoy!
