Healthy Monster Cookie Bites
Ingredients
2/3 cup creamy peanut butter, or other nut or seed spread
1/4 cup honey, agave, or maple syrup
2/3 cup shredded coconut
1 cup old-fashioned oats
2 tbsp ground flax seeds
1/4 cup hemp seeds
1/4 cup mini chocolate chips or m&ms
Optional add-ins: pumpkin seeds, chia seeds, sunflower seeds, chopped pistachios or walnuts, dried cranberries, cinnamon
Instructions
In a medium bowl, add nut butter and honey and mix together with a rubber spatula. Add the rest of the ingredients and mix to combine. Use a rounded scoop or a spoon and scoop out about 2 tbsp of mixture. Roll into balls with your hands, place in a container, and refrigerate. Will keep for up to two weeks in the fridge.
