Parsley Pistachio Pesto
This easy, fresh pesto is sure to be your new favorite sauce to pair with everything. From vegetables to grains to beans to meat, this is the perfect topping for all! It’s seriously addicting.
Ingredients
1/4 cup packed fresh parsley
2 tbsp fresh cilantro
2 tbsp pistachios
1 clove garlic, minced
1 tbsp red onion or shallot
1/4 tsp red pepper flakes
1/8 tsp salt
1/4 cup olive or avocado oil
Directions
Add all except oil to food processor and blitz a couple of times to form a rough paste. While the processor is running slowly drizzle in oil until pesto is preferred consistency (I like it a little chunky). Serve over anything!
Alternatively, add all except oil to the bowl of a mortar. Crush well with pestle. Add oil tbsp by tbsp, and continue to crush and mix until desired consistency. Serve!
