Sourdough Naan Pizzas (DIY Wood-Fired Copycat)

You know that classic crispy, bubbly, charred wood-fired pizza that is completely irresistible and seemingly impossible to create at home? Mmmmm. So much yum. One secret of the pros is that they let their dough rest and ferment for 24-72 hours. I don't know about you, but when the pizza craving hits, I don't have days to wait to satisfy it. So I've created a sourdough naan that gives that perfect subtle tang, and the cooking process leaves it slightly chewy inside, yet bubbly and crispy on the outside. I like to add a little extra flavor with garlic and oregano in the dough, but feel free to omit them if you are making these for any use other than pizza. (And if you don't do sourdough, use this naan recipe or simply buy premade).

Makes 8 naan

Ingredients

2 1/4 tsp (1pk) yeast

1/2 cup warm water

1 tbsp honey (or coconut sugar if vegan)

1/2 cup sourdough starter

1/2 tsp baking powder

2 tsp salt

1 tsp garlic powder

1 tsp dried oregano

1 egg (flax egg if vegan)

2-3 cups flour (depending on hydration of starter)

4 tbsp pastured butter, or avocado oil or olive oil


Direction

In bowl of a stand mixer, whisk together yeast, water, and honey. Let sit 5 min until foamy. Whisk in sourdough starter, baking powder, salt, and egg. Turn mixer on low, and slowly add flour until dough forms a ball. Place in an oiled bowl, cover, and let rise in a warm place until doubled in size, about 1-2 hours.

When ready, melt butter (or pour equal amount of oil into a bowl). On a lightly floured surface divide dough into 8 balls. Roll out to 1/4 inch thick. Cook in a hot cast iron skillet over medium heat until bubbly. Flip and cook another minute, or if you have a gas stove, finish the second side over an open flame (my preferred method). Remove to a wire rack, brush with butter or oil, & sprinkle with salt. Continue until all are cooked.

For pizza, build with preferred toppings (sometimes less is more), then place onto grill over direct heat for 2-3 minutes or indirect heat for 5 minutes. Alternatively, cook pizzas in a preheated 450-500 degree oven.
