Strawberry Chia Jam
Jam is one of those extras that make life just a little bit more delightful. Fruity. Sweet. The perfect pairing to many things. This jam packs some healthy fats from the chia seeds while cutting back on added sugar. In fact, don’t add any sugar at all if you prefer it that way. Fresh strawberries are always the first choice for flavor, but when they are not in season I use exclusively organic, frozen strawberries.
Ingredients
2 cups strawberries, fresh or frozen (thawed)
2-3 tbsp chia seeds
1-2 tbsp coconut sugar (optional)
Directions
Blend or mash strawberries into a purée. Add to a saucepan along with sugar, if adding. Cook over medium heat until simmering. Remove from heat, stir in 2 tbsp chia seeds, and let sit to cool. Once cooled, check consistency. If you prefer a thicker jam then add another tbsp of chia seeds. Pour into a jar, and store in fridge.
