Crispy Pomegranate Goat Cheese Cigars with Balsamic Glaze
Serves 4 (2 each)
Ingredients
8 oz log goat cheese
1/4 cup pomegranate arils
2 tbsp toasted walnut pieces
8 sheets Phyllo pastry
Sesame seeds, optional
Directions
Preheat oven to 450 degrees. Line a sheet pan with parchment paper or grease. Working one at a time, fold one phyllo sheet in half (keep the other sheets covered with a damp cloth to prevent drying and cracking). Place a line of goat cheese on one short end, leaving an inch of pastry on each side. Sprinkle pomegranate and walnuts over goat cheese. Tuck in edges and roll like a burrito. Brush edge with oil before finishing roll to seal the rolls. Continue assembling, one by one. Brush tops of rolls with olive oil. Sprinkle with sesame seeds. Bake at 450 for 10-15 min until golden. Allow to cool for a few min, drizzle with or serve with balsamic glaze.
