Perfect GF Biscuits
These vegan, gf biscuits are easy to throw together and are the perfect flaky side to any soup. Slather them with honey and almond butter for breakfast, or one of my personal faves: use as the base for your avo toast. Yum!
Makes 7-8 biscuits
Ingredients
2 cups gluten free all purpose flour, such as King Arthur Measure for Measure
1 tbsp aluminum-free baking powder
1 tsp salt
1/2 cup coconut oil, solid and cold
1 cup dairy-free milk or cold water
Directions
Measure out your coconut oil, and place in fridge (cold oil will create a flakier biscuit.) Preheat oven to 425 degrees. In a large bowl add flour, baking powder, and salt. Add cold coconut oil and using either a pastry blender or your electric mixer, mix into a course crumb. Add milk or water (amount of liquid may vary slightly depending on the brand of flour you use.) Mix with a fork until just combined. Over mixing will create a dense biscuit. Flour your counter, dump dough onto flour, and gently pat down to about 1 inch thick. Using a biscuit cutter or a the top of a floured drinking glass, cut out 7-8 biscuits and place on an ungreased baking sheet. Bake for 15-17 minutes until just starting to turn golden. Allow to cool 5 minutes before enjoying!
