Sticky Sweet Sesame Cauliflower

Ingredients

1 small-medium head cauliflower

1/4 cup arrowroot or tapioca flour

3 tbsp water

1 tsp toasted sesame oil

Sticky Sauce (recipe below)

2 tbsp sesame seeds


Directions

Preheat oven to 400 degrees. Line a large sheet pan with parchment paper.* Cut cauliflower into bite-size florets. In a medium bowl, whisk together arrowroot flour and water. Toss cauliflower florets in arrowroot mixture until very well coated. Spread evenly onto baking sheet and brush slightly with sesame oil. Bake for 12 minutes, turn, and bake another 10 minutes. While cauliflower is baking make your sauce. Pour sticky sauce over cauliflower, toss to coat, and return to oven for 5 minutes. Remove, sprinkle generously with sesame seeds, and serve with your favorite rice or grain.

Sticky Sauce (adapted from this recipe)

2/3 cup coconut aminos (do not sub with soy sauce or tamari as it will drastically alter this sauce’s flavor)

3 tbsp rice vinegar

1 tbsp arrowroot flour or tapioca flour

1/2 tsp fresh or ground ginger (optional)

1 tbsp coconut sugar (optional)


Directions

Combine all sauce ingredients in a small saucepan. Whisk over medium heat until boiling, then reduce to simmer and whisk occasionally until thickened and sticky, about 3-5 minutes.

*This is a very messy recipe. If not using parchment paper, omit the step of tossing cauliflower with sauce and baking another 5 minutes, and instead just toss right before serving.
